meet.make.lemon cookies.



I came across this recipe on Pinterest last week.... and immediately decided I needed to make these right away. I have a weakness for lemon flavoured things, and after a quick glance at the recipe I realized I had all of these things at home, so a trip to the grocery store wasn't even needed. 

My evening just got exciting. Baking lemon cookies, and so excited about it. 


You will need: 

½ cups butter, softened
1 cup granulated sugar
½ teaspoon vanilla extract
1 egg
1 teaspoon lemon zest
1 tablespoon fresh lemon juice
¼ teaspoon salt
¼ teaspoon baking powder
⅛ teaspoon baking soda
1-½ cup all-purpose flour
½ cups powdered sugar

Preheat oven to 350 degrees.

In a large bowl, cream butter and sugar together until light and fluffy. Whip in vanilla, egg, lemon zest, and juice. Stir in salt, baking powder, baking soda, and flour slowly until just combined. 

Pour powdered sugar onto a large plate. Roll a heaping teaspoon of dough into a ball and roll in powdered sugar. Place on baking sheet and repeat with remaining dough.

Bake for 9-11 minutes or until bottoms begin to barely brown and cookies look matte (not melty or shiny). Remove from oven and cool cookies about 3 minutes before transferring to cooling rack. If you are using a non-stick darker baking tray, reduce baking time by about 2 minutes.


My pictures do not do this recipe justice. Trust me. This recipe made the best little lemon-y shortbread-y drops of heaven ever. And I am NOT a talented baker.

  7. Those sound so perfect for Autumn! I'm not much of a lemon-flavor fan, however I have had some cookies with lemon in them that totally rocked. :D And THESE sound delicious!
