meet.make.hummus cups.

I needed to throw together a quick appetizer before our Easter dinner at Steph's place. So filing through our Pinterest boards, I came across these adorable Hummus Cups!
Some of you may know, I am NOT the Chef of this group. In fact, my fiancé even does most of the cooking at home, and I am very content with this. He just always makes it look so easy!

I on the other hand, have to follow dirrections EXACTLY... and I will STILL manage to mess it up somehow. Though I have found that although the outcome of my cooking may look kind of weird, it tastes good! And that's all that matters right? Well, for me at least.

I decided to step out of my comfort zone and make something to bring over! This recipe was provided by Inspired Taste, under the easy appetizer category..PERFECT!
Ingredients I used:
  • 1 roll of Pillsbury Classic Pizza Crust
  • Hummus
  • Diced Cucumber
  • Quartered Cherry Tomatoes
  • Salt
The recipe said to use a rolling pin to spread out the Pillsbury Crust, then use a round cookie cutter to cut out the shapes. However after reading again, I realized I did not have a rolling pin... or a round cookie cutter (strike one). So I simply pulled apart the dough and flattened the sections by hand. 

Then press the dough into mini muffin cups. Turns out, I didn't have "mini" muffin cups (strike two). Then bake the cups for 8-10 minutes. 
Even though I poked holes at the bottom of the cups to ensure that the bottoms didn't rise, they still turned out like puffed pastry (strike three, you're out).

BUT HERE COMES THE PINCH HITTER (I'm not quite sure why I've started the baseball references, but I'm going with it). As the dough was just starting to cool, I used the bottom of a spice container and squished down the bottoms. TA-DA! CUPS! 
I then filled the cups with hummus, and placed the cucumbers and tomatoes on to garnish. Cute right?
Turns out my cooking skill may not be as terrible as I thought, because everyone at dinner really enjoyed these tasty treats! I will definitely be making these again, and hey, maybe I STILL won't follow the recipe as directed. (A Home Run!)

  1. Oh YUM!! What a fun idea. We eat a truck load of hummus around here. It would be cute to add a little falafel patty to these for a more filling nibble. Thanks for sharing.

  2. I've only tried hummus once and i can't remember if i liked it or not only because of the texture. I think this would be yummy. I might try it to take to work for lunch next week. Thanks for sharing.

  3. Looking good! And I'm totally with you on the improvising part of following recipes. By the way, if you don't have a rolling pin, you can always use a clean wine bottle =)
