Life is like a batch of mini muffins... it’s as good as you make it!
I can never finish a whole muffin to myself... ok I’m lying but you can’t deny the cuteness of the mini size adds to its edible appeal. Yes, you end up eating three, four, five times (who's counting?!) the regular portion but for some reason, your brain tricks you into thinking its guilt free. Well, mine at least! Thank you Google for finding me this tasty treat. For the chocolate lovers out there and to the healthy buffs (there’s some banana in them too), bon ap-petit ;)

The goods:
- Kitchen Aid Mixer (aka Chocolate Rain) – Don’t have one? Get married and put it on the registry. Worked for us!
- 1 1/2 cups of flour
- 2/3 cup sugar
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup mashed ripe bananas (about 2 bananas but I used three)
- 1 egg
- 1 tsp vanilla extract
- 1/2 cup unsalted butter, melted
- 1/4 cup milk
- 3/4 cup chocolate chips (don't be stingy - add more!)
The steps:
- Preheat oven to 375 degrees Fahrenheit
- Line the muffin tray and lightly coat with non-stick spray
- Mash bananas then add egg, melted butter, milk, vanilla extract and mix with Chocolate Rain
- Mix flour, sugar, baking powder and salt in separate bowl then add to the mashy mix - hand stir gently
- Dump in the best part - chocolate chips and stir mixture
- Fill muffin liners and bake for 18-ish minutes (do the cake test and make sure the toothpick comes out clean)
