So then it became... the battle of the scones!
In the red corner, we have Stephanie's pick - Feta and Chive Sour Cream Scones. If you're interested in this recipe, check out this recipe. We followed it exactly as outlined. We weren't brave enough to add our own spin and it sounded delicious as is.
In the white corner, it's Cindy's pick - Dill and Sun-dried Tomato "Pizza" Scones.
Recipe:
- In a large bowl, mix well:
- 2 1/2 cups of flour
- 2 tbsp. sugar
- 1 1/2 tsp. salt
- 3 tsp. baking baking
- 2 tsp. dill
- pinch of fresh ground pepper
- Cut with a knife:
- 1/3 slightly rounded shortening
- 2 tbsp. minced sun-dried tomato
- Mix with a pasty blender, just until shortening mixture is reduced to marble-sized grains
- Stir in 1 1/4 cup milk with a fork just until milk is absorbed and then add a 3/4 cup of cheddar cheese. Dough will be very wet!
- Turn dough out onto a heavily floured counter, and knead three times
- Place on parchment lined sheet sprinkled with cornmeal
- Pat into a circle about 1 3/4 inches thick. Cut into 6-8 wedges
- Sprinkle with more cornmeal if you wish
- Bake for 15 - 18 mins
- Test for doneness by turning over a scone; bottom should be lightly browned. If the bottom is white return to oven for a few more mins
Let the battle begin!!!
Stat breakdown...
The judges weigh in...The extra add-ons for each scone were perfect! The paprika and sea salt really the feta, sour cream, and chive, and then the cornmeal added some crunch to the softer dill sun-dried tomato mix.
Overall, there wasn't a clear victor as they were both winners in our eyes! The fact that we successfully accomplished two recipes was a feat in itself! We suggest to try both and decide for yourself...
Happy scone-ing!
These look so good! I think the sound of Steph's is more appealing to me... but I'm more attracted to the pizza look of Cindy's! Cute idea ladies!
